Recipe makes 2 Servings

1 head of living bibb lettuce, root removed, washed and leaves torn whole
1 bunch of basil, chopped
1 cup(s) green olives, chopped roughly
1/3 cup(s) IL Villaggio Ricotta Salata, shaved
2 Tbsp red wine vinegar
1 large clove of garlic, zested or finely minced
1/3 cup(s) extra virgin olive oil

In a serving bowl, combine lettuce, basil, olives, and cheese.
In a smaller bowl add red wine vinegar and garlic.
Slowly whisk in olive oil in a continuous stream to form an emulsion.
Season as needed with salt and pepper.
Toss dressing with salad and garnish with more shaved cheese on top.
