Lentil Stew with Kale & Sweet Potatoes

Recipe makes 8 Servings

2 Tsp olive oil
1 small white onion, chopped
3 garlic, minced
4 cup(s) kale, roughly chopped
1 sweet potato, peeled and diced
1 cup(s) carrots, chopped
1 cup(s) lentils
1/2 Tsp salt
1/2 Tsp black pepper
32 Oz low sodium vegetable broth

Place oil in a large pot or Dutch oven over medium-high heat.
Add onions and cook, tossing occasionally, 3 to 5 minutes.
Stir in garlic and cook until fragrant, about 1 minute longer.
Add kale, sweet potatoes, carrots, lentils, salt, pepper and broth.
Bring to a boil, then reduce heat and simmer partially covered.
Stir occasionally and cook until lentils and sweet potatoes are tender, 30 to 35 minutes.
