Lemon Herb Baked Chicken Tenders

Recipe makes 4 Servings

2 cup(s) whole wheat breadcrumbs
1 Tsp dried thyme
1 Tbsp lemon, zest
2 Tbsp Parmesan cheese, grated
2 Tbsp mayonnaise
1 Tbsp Dijon mustard
1/4 Tsp kosher salt
1/2 Tsp black pepper
1 1/2 Lb chicken tenders, tendon removed

Preheat oven to 375°F and line a baking sheet with foil.
Combine breadcrumbs, thyme, lemon zest and Parmesan cheese in a shallow dish.
Place mayo, mustard, salt and pepper in a bowl. Add chicken and toss to coat.
Add coated tenders, a few at a time, to breadcrumbs and gently press into the crumbs to make sure they stick. Place tenders on prepared baking sheet. Repeat until all are coated.
Bake 12 to 15 minutes or until tenders are cooked through.
