Recipe makes 5 Servings

2 Tbsp olive oil
1 Lb H-E-B Natural Lamb
1 cup(s) yellow onion, small, diced
3 garlic, sliced
1 Tsp lemon, zested
1/2 Tsp Adams Ground Cumin
1/4 Tsp Adams Ground Cinnamon
3 Tsp fresh mint, chopped
1 canned chickpeas, rinsed and drained
5 cup(s) mixed greens
1/2 Central Market Organic Cucumber, peeled, seeded and chopped
2 roma tomato, sliced

Heat the oil in a large skillet over medium high heat. Add in the ground lamb and break up into smaller chunks. Allow the lamb to brown completely. Stir occasionally.
Add in the onion, garlic, cumin, cinnamon, and fresh mint. Cook until onions are translucent and most of the liquid has evaporated.
To serve, evenly distribute the chickpeas, cucumber, mixed greens and tomatoes into 5 large bowls.
Top with lamb mixture. Serve with warm pita.
