Recipe makes 6 Servings

2 Tsp olive oil
1 cup(s) yellow onion, diced
1 cup(s) red bell pepper, diced
1 Lb Extra Lean Ground Beef 96% Lean
1 Hidden Valley Ranch Spicy Ranch Dip- Dressing Mix
2 cup(s) H-E-B Select Ingredients Chicken Broth
1 15.2 oz can no-salt whole kernel corn, drained
1 14.5 oz can fire roasted diced tomatoes
1 low sodium taco seasoning
1 15 oz can no salt pinto beans
1 Bush's Best Golden Hominy

Place olive oil in a large pot and heat on medium-high.
Sauté onions and peppers until onions are translucent. Spoon into a small bowl and set aside.
In the same pot, cook ground beef until completely browned. Drain fat.
Return cooked peppers and onions to pot and add dry ranch mix, chicken broth, corn, roasted tomatoes, taco seasoning, pinto beans and hominy.
Bring to a simmer and serve.
