Kale and Quinoa Salad with Creamy White Bean Dressing

3 cup(s) kale, chopped
1 cup(s) Central Market Quinoa
1 medium gala apple, diced
1 cup(s) radishes, thinly sliced
1 cup(s) cherry tomatoes, halved
15 Oz Goya Small White Beans, liquid included
1 garlic clove
1/4 Tsp kosher salt
1 Tbsp lemon, juiced
1/2 Tsp black pepper
1 Tbsp Pecorino Romano, grated

Instructions

Place kale in a large bowl.

Cook quinoa according to package directions. While quinoa is still hot, transfer to a large bowl with kale. Toss to combine and allow kale to wilt.

Add apples, radishes and tomatoes to kale and quinoa mixture.

To make dressing, place white beans, garlic, salt, pepper, lemon juice and cheese in a blender. Blend until smooth.

Pour salad dressing over kale and quinoa mixture. Toss well and serve.
