Kale and Avocado Salad with Seared Chicken

Ingredients

Recipe makes 4 Servings

1 Lb H-E-B Thinly Sliced Chicken Breasts
1 Tbsp olive oil, divided use
1 Tsp garlic powder
1 Tbsp lemon, juiced
1 Tbsp honey
4 cup(s) kale, chopped
1 large avocado, diced
1 pear, sliced
1/4 cup(s) Parmesan cheese, shredded

Instructions

Preheat a large skillet over medium-high.

Place chicken, half of the oil and garlic powder in a bowl. Turn to coat.

Place chicken in hot skillet and sear 3 to 4 minutes per side or until cooked through. Remove from heat and set aside.

Combine remaining oil, lemon juice and maple syrup. Whisk until blended.

Place kale in a large bowl and add lemon and maple vinaigrette. Massage kale until it turns a dark green.

Slice chicken and add to kale and remaining ingredients. Toss and serve.
