1 Lb H-E-B Fine Ground Beef Brisket for Burgers
1 Lb H-E-B Ground Veal
1 Lb H-E-B Natural Ground Pork 90/10
1 cup(s) pecorino romano, grated, 3/4 cup for meatballs 1/4 cup for garnish.
1 cup(s) H-E-B Italian Panko Bread Crumbs
3 large eggs
1/2 cup(s) fresh Italian parsley, chopped
2 Tsp kosher salt, plus more as needed to taste
2 Tsp cracked black pepper, plus more as needed
1/4 cup(s) grapeseed or vegetable oil, use more as needed for frying in batches

Instructions

In a large metal bowl, combine ground meats, pecorino, breadcrumbs, eggs, parsley, salt and pepper and 2 cups of ice cold water. *Water must be ice cold.

Mix everything well by hand to fully incorporate ingredients. Roll into 20 to 30 golf ball sized meatballs.

Set a large non-stick skillet over medium high heat, add olive oil and allow to get hot approximately 1 minute.

Add meatballs and fry in batches moving them every few minutes until meatballs are nicely browned on all sides and fully cooked. Repeat with each batch.

Allow to cool and serve with your favorite tomato sauce, garnish meatballs with remaining pecorino. Season to taste as needed.
