Jalapeño Popper Stuffed Grilled Cheese

Recipe makes 2 Servings

4 Oz cream cheese
1 jalapeño, stem and seeds removed and chopped
4 slices of bacon, cooked and chopped
4 Tsp salted butter
6 slices country white bread, similar slzes
4 slices medium cheddar cheese

In a medium bowl, combine cream cheese, jalapeño and bacon, set aside. *Adjust amount of jalapeño you use based on spice preference.
Butter 4 slices of bread and place 1 to 2 slices in non-stick skillet over medium low heat. Do not overcrowd pan.
Place remaining two slices on cutting board and using a knife, core slice of bread and remove crust (but keep crust in one piece). The more bread you remove the more space you'll have to stuff your sandwich.
Place 'cored' crust on bread in pan. Layer 1 slice of cheese and a couple spoonfuls of cream cheese mixture in grilled cheese. Top with additional slice of cheese and other bread slice.
Press down slightly with spatula and cook until golden brown, then tilt pan and carefully flip. Cook an additional 3 minutes or until golden brown.
Allow to sit a minute before slicing.
Chef's Note: Try adding sliced chicken or turkey to your sandwich!
