Italian Turkey And Spinach Meatloaf

1 1/2 Lb 93% ground turkey
1 1/2 cup(s) panko bread crumbs
1 small white onion, chopped
1/2 cup(s) tomato sauce
1 eggs, large
2 H-E-B® peeled garlic cloves, crushed
1 1/2 Tsp Adams Italian Seasoning
3/4 Tsp salt
3/4 Tsp black pepper
1/2 Tsp crushed red peppers
10 Oz chopped spinach, thawed and squeezed dry
1 cup(s) fat-free mozzarella cheese, shredded
1/2 cup(s) Parmesan cheese, shredded

Heat oven to 350°F.
For meat loaf, combine turkey, bread crumbs, onion, tomato sauce, egg, garlic, seasoning, salt, pepper and red pepper flakes thoroughly in a large bowl.
For filling, mix spinach, mozzarella and Parmesan cheese in a separate medium bowl.
Press meat mixture into an 8 x 14-inch rectangle about 1/2-inch thick on a large sheet of waxed paper.
Spread filling over turkey, leaving a 3/4-inch border around edges.
Roll from the short end in jellyroll fashion.
Press turkey over filling at both ends and seal.
Place seam side down on rack in open roasting pan.
Sprinkle top with additional Parmesan cheese.
Bake 40 to 50 minutes until meat thermometer inserted in center of meat loaf reads 160°F.
Cut into 1-inch thick slices to serve.
