Italian Sausage, Tomato and Basil Casserole

Recipe makes 7 Servings

1 Tbsp olive oil
1 Tbsp salted butter
1 H-E-B Meal Simple Tomato Basil Casserole Kit
2 cup(s) water
1 Tsp Italian seasoning
1/4 Tsp ground pepper
1 Lb Italian sausage, browned
1/2 cup(s) ricotta cheese
2 cup(s) shredded mozzarella cheese, divided use
3 cup(s) farfalle pasta, prepared according to package instructions

Preheat oven to 350°F and grease a casserole dish; set aside.
Heat large sauce pan over medium-high heat and add olive oil and butter. Add tomatoes and cook 10 minutes, stirring often and mashing tomatoes while cooking.
Stir in tomato paste, seasoning packet and 2 cups of water and bring to a boil. Add Italian seasoning and pepper. Stir and reduce heat to a simmer.
For a smoother consistency, remove sauce from heat and pureé with blender or food processor. If chunky consistency is preferred, skip this step.
Stir in one pound of cooked ground Italian sausage; cover and simmer 5 minutes.
Add ricotta cheese and 1/2 cup of mozzarella cheese and stir.
Stir in farfalle pasta until noodles are well mixed in and cheese is melted.
Pour into prepared casserole dish and top with remaining mozzarella cheese.
Cover with foil and bake 15 minutes then bake uncovered an additional 5 minutes.
