Ingredients

Recipe makes 8 Servings

4 sweet Italian sausage links
4 cup(s) baby spinach
4 multigrain pita bread
1 1/2 Tbsp 100% pure olive oil
1/8 Tsp salt
1/8 Tsp black pepper
4 roma tomato, sliced and seeded
2 cup(s) reduced-fat crumbled feta cheese

Instructions

Heat oven to 350°F.

Remove sausage from casings and brown in a non-stick skillet over medium-high heat. Crumble sausage with spoon while cooking.

Add spinach and wilt with cooked sausage.

Lay four pitas on a non-stick baking sheet.

Brush with olive oil and sprinkle with salt and pepper.

Spoon sausage and spinach on pitas.

Lay slices of tomato on sausage mixture and sprinkle with feta crumbles.

Bake for 8 to 10 minutes or until cheese is soft and pita is crispy and hot.
