Italian Sausage and Rice Skillet

Recipe makes 6 Servings

1 Tbsp canola oil
1 Lb spicy Italian sausage-ground
1/2 cup(s) white onions, diced finely
1 large garlic clove, minced fine
2 medium zucchini, medium dice
14 1/2 Oz Italian style diced tomatoes
1 Tsp dry oregano
1 Tsp kosher salt, plus more as needed to taste
1/2 Tsp black pepper
3 cup(s) long grain rice, fully cooked and set aside

Place a large skillet over medium high heat, add oil and brown sausage, stirring to break bits.
Pour off all but 2 tablespoons of oil, then add onions and garlic and stir fry until translucent.
Add zucchini, diced tomatoes, oregano, salt and pepper. Cover and simmer for 5 to 7 minutes before adding rice.
Stir occasionally until zucchini until tender. Add rice toss to coat and season to taste. Garnish with sliced olives.
