Iberico Confit on Catalan Toast

Recipe makes 6 Servings

1 1/4 Lb Iberico Pork "pressa"
1 1/2 Tsp kosher salt, plus more as needed
1 1/2 Tsp cracked black pepper, plus more as needed
1 Tsp smoked paprika
1 large white onion, diced
12 garlic cloves, 10 left whole, 2 zested or minced finely
1 1/2 cup(s) Central Market 100% Spanish Organic Extra Virgin Olive Oil
1 ciabatta bread, sliced thin
3 Roma tomatoes

Season pork with salt, pepper, and smoked paprika.
Place pork, onions, and garlic cloves into slow cooker and cover with olive oil and set crock pot to lowest setting.
Cook 6 to 8 hours or until pork is fall apart tender.
Preheat oven to 350˚F.
Place bread on sheet pan and cook until just toasted and crisp.
While bread toasts, grate tomatoes with cheese grater.
Place tomatoes into a bowl, add minced garlic and mix. Season to taste as needed.
To serve, spread a little tomato on each toast followed by a little pork confit. Season to taste as needed.
