1 Tbsp canola oil
1 clove garlic, sliced
4 roma tomatoes, chopped
1 cup(s) onion, rough chop
1 jalapeño, sliced
1 1/2 cup(s) chicken stock, or water
12 Mi Tienda by H-E-B Caseras/Homestyle Corn Tostadas
15 Oz can refried beans, heated according to package directions
6 eggs, cooked to preference

Instructions

Heat oil in a large sauté pan over medium-high heat. Add in garlic, tomatoes, onion and jalapeño slices.

Cook until tomatoes begin to fall apart, then add in chicken broth. Reduce to a simmer and continue to cook until tomatoes are completely broken down and onion is soft. Season to taste.

To prepare, spread a layer of refried beans onto one tostada. Top with a second tostada and place on a plate. Top with eggs and a generous portion of sauce. Serve immediately.
