Honey and Cumin Roasted Chicken and Acorn Squash

Ingredients

Recipe makes 4 Servings

2 Tbsp olive oil
1 Tsp cumin
1/2 Tsp salt
2 garlic, minced
2 Tbsp H-E-B Desert Honey
1 acorn squash, cut into fourths, seeds removed
1/2 Lb chicken tenders

Instructions

Preheat oven to 425°F.

In a small bowl, combine olive oil, cumin, salt, garlic and honey.

Lightly coat squash quarters then place on a foil lined baking sheet.

Toss chicken tenders in remaining honey mixture and place on a separate baking sheet.

Bake squash 15 minutes, then place chicken in oven.

Roast for an additional 15 minutes.

Remove everything from oven and serve.
