Homemade Garlic Knots

Recipe makes 15 Servings

7 cup(s) all purpose flour, plus as needed for dusting work surface
1/4 Oz active dry yeast
1 1/2 Tbsp sugar
3 Tsp kosher salt
2 3/4 cup(s) warm water
6 Tbsp Sonoma Roasted Garlic and Herbs California Extra Virgin Olive Oil, divided use

In the bowl of a stand mixer, combine flour, yeast, sugar, salt, water and 2 tablespoons of olive oil.
Using the dough hook attachment, mix about 10 minutes on low until incorporate and dough is tacky but not sticky. Add water and flour by the tablespoon if needed.
Once dough has come together, roll out onto a floured surface and knead 3 minutes then place in a clean, greased bowl.
Allow dough to rise until doubled for about an hour in a warm place. Tip: Turn on over for a minute or two then turn off and place dough in oven covered with a clean, wet towel.
Once dough has risen, roll out onto floured work space and press down evenly.
Cut dough into 15 equal size pieces. Roll dough into about 8-inch long pieces and tie in a knot, tucking ends under dough or pressing on top.
Place dough on a parchment lined baking sheet and allow to rise on the counter another 30 minutes.
Preheat oven to 400°F.
Bake garlic knots 15 to 20 minutes then remove and brush on remaining olive oil. Bake an additional 10 to 25 minutes or until well browned.
Freshly grate Parmesan over knots and serve.
