2 Tbsp Hill Country Fare Extra Virgin Olive Oil
1/2 cup(s) celery, chopped
1/2 cup(s) sweet onion, chopped
1/2 cup(s) red bell pepper, chopped
1/2 cup(s) water
16 Oz H-E-B Corn Bread Stuffing
1/4 cup(s) Central Market Organics Ground Flaxseed
14 Oz Hill Country Fare Chicken Broth

Instructions

Preheat oven to 350ºF. Spray a 9 x 13 inch baking dish with non-stick spray and set aside.

Heat a large heavy bottom skillet over medium heat 2 minutes.

Add oil, celery, onion and bell pepper. Stir fry until onions are tender, about 5 minutes.

Combine cooked vegetables with stuffing mix, ground flax seed, 1 can of chicken broth and 1 1/2 cups water in a large mixing bowl. Season to taste with salt and pepper and spoon into prepared baking dish.

Loosely cover with a sheet of sprayed foil and bake on the center oven rack for 20 minutes. Remove foil and bake 5 more minutes.

You can prepare this recipe a day in advance, cover and refrigerate until ready to bake.
