Herbed Shrimp Scampi with Zucchini Noodles

Recipe makes 4 Servings

1 Pt H-E-B Select Sweet Tomatoes, halved
1 Tbsp olive oil
3/4 Lb Argentine shrimp, peeled and deveined
1 H-E-B Scampi Cooking Sauce
2 Tbsp Italian parsley, finely chopped
10 .7000 Oz H-E-B Select Ingredients Zucchini Spirals

Heat a large skillet over medium high adding tomatoes and oil. Cook for 2 to 3 minutes, just until tomatoes start to wilt.
Add shrimp, stir and cook for 2 to 3 minutes, just until they start to turn whitish-pink.
Turn heat down to medium and add sauce. Stir to coat shrimp. Bring to a simmer and add zucchini spirals to pan. Stir just to heat through, about 2 to 3 minutes.
Remove to serving plates and garnish with fresh parsley.
