1/4 cup(s) Sonoma Gourmet Roasted Garlic & Herbs Extra Virgin Olive Oil, as needed
1/4 cup(s) fresh mint, chiffonade or thinly cut
1/3 cup(s) Pecorino Romano, shaved
1 Tsp kosher salt, plus more as needed
1 Tsp cracked black pepper, plus more as needed
2 Tbsp lemon juice, plus more as needed

On a serving dish, place sliced tomatoes so they slightly overlap one another.
