Hearty Mushroom Barley Sausage Soup

Recipe makes 4 Servings

1 Tbsp olive oil
12 Oz H-E-B Reduced Fat Sausage
1/4 cup(s) shallot or sweet onion, finely chopped
21 Oz H-E-B Select Ingredients Cream of Mushroom Condensed Soup
10 1/2 Oz whole milk, (fill up soup can)
10 1/2 Oz half & half, (fill up soup can)
8 4/5 Oz Central Market Microwaveable Barley and Lentils

Place a large pan over medium-high heat and add oil and sausage. Sauté 5 to 6 minutes or until sausage begins to brown.
Once browned, add shallot to pan and cook until they begin to soften; about 3 to 4 minutes.
Reduce heat to low and add condensed soup, milk, half & half and barley/lentil blend. Bring to a simmer, just to heat through. Serve immediately.
Chef's Tip: Garnish with fresh chopped parsley or chives and serve in hollowed out bread bowl for a pretty presentation and a hearty meal.
