1 Tbsp canola oil
1 Lb H-E-B Extra Thin Sliced Chicken Breast, thinly sliced
1 cup(s) white onion, thinly sliced or julienned
2 medium red bell peppers, thinly sliced, seeds and tops removed
3 cup(s) queso asadero, shredded, plus more as needed
12 H-E-B Fresh Bakery Flour Tortillas, plus more as needed

Instructions

Place a large sauté pan over medium high heat, add oil and allow to get hot. Add chicken, onions and peppers, season with a pinch of salt and pepper.

Continue to stir-fry until chicken is nicely browned and onions and peppers are starting to caramelize. Remove from heat and allow to cool.

To make quesadillas, place cheese along with some fajita mixture onto a tortilla, add a little more cheese to top and place another tortilla on top and press gently. Repeat this process with each quesadilla.

Place quesadillas into a non-stick pan and cook for 2 to 4 minutes per side or until tortillas are just browned and cheese is melted. Allow to cool, cut and serve with your favorite salsa and sides.
