Hearty Chicken and Butternut Tortilla Soup

Recipe makes 4 Servings

1 H-E-B Chicken Tortilla Soup Kit
1 Tbsp olive oil
8 Oz H-E-B Butternut Squash Cubes
1/2 cup(s) Central Market Quick Cook Grains Barley, Lentils & Split Peas
8 cup(s) water
2 cup(s) Central Market Organics Power Greens, chopped and packed into cup for measuring

Heat soup pot over medium heat. Open soup kit to see all ingredients.
From soup kit, chop serrano pepper and add to pan along with oil. Add onions, bell pepper and garlic to pan, Add butternut squash to pan, stir well and cook for 5 minutes until onions begin to soften.
From the soup kit add chicken and tomatoes and sauté for another 5 minutes.
Add water, spice packet and 1/2 cup of barley/lentil blend. Turn heat to medium high and bring to a simmer.
When soup comes to simmer, reduce heat to low and cover. Simmer 15 minutes, or until vegetables are tender.
Remove cover and stir through power greens. Finish with a squeeze of lime and garnish with tortilla strips if desired (both from soup kit).
