Recipe makes 8 Servings

1 Tbsp olive oil
2 Lb ground round
1 1/2 cup(s) yellow onion, thinly sliced
1 Tsp garlic
1 1/2 cup(s) yellow bell pepper
1 1/2 cup(s) red bell pepper
1 cup(s) carrots, finely chopped
3/4 cup(s) golden raisins
1/4 cup(s) sliced green olives
2 Tbsp H-E-B Balsamic Vinegar of Modena
1/4 Tsp black pepper
2 bay leaves
14 1/2 Oz stewed tomatoes
1 8 oz can tomato paste

Place oil in a large non-stick skillet over medium-high heat. Add beef and cook until browned, stirring to crumble as it cooks. Remove from pan and drain well.
Add onions and garlic to same pan and sauté 3 minutes.
Add bell peppers and carrots; sauté 3 minutes.
Return beef to pan. Stir in raisins and remaining ingredients; bring to a boil. Reduce heat and simmer 15 minutes, stirring occasionally. Discard bay leaves and serve.
