Hatch Crab Cakes Sammy with Hatch Aioli

Recipe makes 8 Servings

3 Tbsp olive oil
4 Hatch Crab Cakes, split into half
1 Hatch pepper, roasted, peeled and seeded
1 garlic cloves
1/2 cup(s) mayonnaise
1/2 cup(s) cilantro
4 hamburger buns, toasted
1 cup(s) shredded cabbage

Heat 2 tablespoons of oil in a non-stick skillet over medium heat. Add in the crab cakes and cook for 5 to 6 minutes per side until heated through and crispy on each side.
Combine Hatch pepper, garlic, 1 tablespoon of olive oil, mayo and cilantro into a blender or food processor, blend until smooth.
Spread a generous amount of aioli on both sides of a bun, top with crab cake, shredded cabbage and add the top bun, serve hot.
