Recipe makes 15 Servings

1 Tbsp cayenne pepper
2 Tbsp cumin
3 Tbsp coriander
2 Tbsp smoked paprika
2 Tbsp paprika
2 Tbsp garlic powder
2 Tbsp kosher salt
2 Tbsp black pepper
8 Lb H-E-B Natural Brisket

Preheat oven to 250ºF.
In a bowl mix together cayenne pepper, cumin, coriander, smoked and regular paprika, garlic powder, salt and pepper.
Season brisket liberally on both sides. Place in a large roasting pan or sheet pan, cover with foil and cook 8 to 10 hours or until tender.
Once cooked keep covered and allow to rest for at least 30 to 45 minutes before carving.
Chef's Note: I let my brisket sit in rub overnight to really soak in more flavor. I like to serve this brisket shredded on soft Hawaiian rolls with a little bit of spicy mustard and pickles.
