Haddock with Braised Cavolo Nero

Recipe makes 4 Servings

1/4 cup(s) extra virgin olive oil
3 garlic cloves, minced or zested
1/4 cup(s) shallot, minced
1 large bunch Lacinato kale, roughly chopped
1 Lb haddock
1 Tsp kosher salt, plus more as needed
1 Tsp cracked black pepper, plus more as needed
1 Tsp paprika
1/3 cup(s) fresh lemon juice

In a large pot with tight fitting lid add olive oil, garlic and shallots. Stir fry for 3 to 5 minutes or until just translucent.
Add kale and stir fry over medium high heat until kale is just wilted.
Cut haddock or cod into 4 equal pieces and season liberally with salt, pepper and paprika.
Add lemon juice and 1/3 cup of water to kale and place fish evenly on top of kale.
Cover and turn down heat to medium low. Allow to cook for 15 to 20 minutes or until fish is fully cooked and starting to flake. Season to taste as needed with more salt and pepper.
