Grilled Zucchini and Prosciutto Ribbons

Recipe makes 8 Servings

1 Tsp grapefruit, zest of
1/4 cup(s) grapefruit, juiced
1 garlic, minced
1 Tsp fresh thyme
1/4 cup(s) olive oil (1/4 cup for dressing, plus 1 tbsp for brushing)
2 zucchini, sliced thinly on a mandoline or vegetable peeler
2 medium squash, sliced thinly on a mandoline or vegetable peeler
6 Oz thinly sliced prosciutto or serrano ham
2 Tbsp Parmesan, grated

Preheat grill to medium heat.
In a small bowl, combine the zest, juice, garlic, thyme, and oil together.
Alternately thread the zucchini, squash ribbons and prosciutto onto the bamboo skewers.
Brush lightly with a small amount of the vinaigrette.
Grill for approximately 2 minutes per side, just long enough for edges of squash to crisp and char.
Remove from grill and drizzle with vinaigrette and sprinkle Parmesan.
