Grilled Tri Tip with Charred Tomatoes

Ingredients

Recipe makes 8 Servings

1 1/4 Lb tri tip beef steak
1/4 Tsp kosher salt
1 Tsp black pepper
1 garlic, minced
1 Tbsp H-E-B Balsamic Vinegar of Modena
2 Tbsp olive oil, divided
4 plum tomatoes

Preheat grill to medium-high.

Place tri tip in a dish or bowl and sprinkle with salt, pepper, garlic, balsamic vinegar and 1 tablespoon olive oil. Allow steak to come to room temperature, approximately 30 minutes.

Meanwhile, cut plum tomatoes in half and toss in remaining olive oil and a bit of salt. Set aside.

Grill tri tip 8 minutes per side.

Place tomatoes cut side down on grill 3 minutes or so until skin blisters but tomatoes remain firm.

Let steak rest several minutes before slicing. Serve with grilled tomatoes.
