Grilled Tri-Tip with Charred Green Onion Sauce

Ingredients

Recipe makes 8 Servings

2 Lb tri-tip roast
1 Tsp kosher salt, plus more as needed
1 Tsp cracked black pepper, plus more as needed
2 bunches of green onions, white ends trimmed
1/3 cup(s) fresh mint, leaves only loosely packed
1 large jalapeño, stem and seeds removed
1 bunch fresh cilantro, leaves only chopped
1 Tbsp ground cumin
1 Tbsp coriander
3 cloves of garlic, smashed
1/4 cup(s) white vinegar
1 cup(s) grapeseed or canola oil

Instructions

Preheat grill to medium-high, 350 - 375°F.

Season tri-tip with salt and pepper liberally on both sides. Allow to sit at room temperature for at least 20 minutes before grilling. Meanwhile make sauce.

Place onions on grill and cook until just charred. Remove and place in a blender along with mint, jalapeño, cilantro, cumin, coriander, garlic, vinegar and oil. Blend until smooth. Season to taste and refrigerate until ready to use.

Spray grill liberally with grill spray and place meat on grill. Cook to desired doneness, approximately 15 to 20 minutes for medium. Flip meat halfway through cooking.

Remove meat from grill, cover with foil and allow to rest for at least 15 minutes before carving against the grain. Drizzle each slice with charred green onion sauce. Season as needed to taste.
