Grilled Sweet Potato Salad

Ingredients

Recipe makes 6 Servings

3 medium sweet potatoes
1 granny smith apple
1/2 medium red onion
3 Tbsp H-E-B Light Olive Oil
2 Tbsp balsamic vinegar
1 Tsp Dijon mustard
2 Tbsp Italian parsley, chopped
1/8 Tsp kosher salt
1/8 Tsp black pepper

Instructions

Heat charcoal 30 minutes until covered with a light layer of gray ash or heat gas grill on High 10 minutes with lid closed.

Peel potatoes and core apple. Cut potato, apple and onion into 1/2 inch thick slices.

Place potatoes in a medium bowl; toss with 1 tablespoon olive oil to coat.

Grill potatoes 5-6 minutes per side. Grill apples and onions 3-4 minutes per side, until crisp and tender.

Remove from grill and cover to keep warm.

Combine remaining ingredients for dressing in a medium bowl.

Coarsely chop potatoes, apples and onions. Toss with dressing and serve.
