Recipe makes 6 Servings

2 large limes, juiced
1 cup(s) coconut water
2 Tbsp honey
16 Oz pineapple spears

Preheat grill to 350°F.
Meanwhile, prepare sweet and sour marinade by placing lime juice, coconut water, and honey in a small pot.
Bring to a simmer, whisk and remove from heat to cool.
Grill pineapple spears for a few minutes turning so each side gets grill marks. Remove when properly marked.
Place grilled pineapple in a plastic container or plastic bag and add sweet and sour marinade.
Chill at least 30 minutes to allow flavors to set up, rotating pineapple as it marinates so all sides are soaked.
Chefs Note: The sweet and sour marinade is fantastic used in cocktails.
