Grilled Shrimp with Spicy Za'atar Relish

Recipe makes 6 Servings

2 heirloom tomatoes, diced small
1 medium shallot, minced
1 Tbsp Adam's Reserve Za'atar Rub
1/4 cup(s) lemon juice
1 serrano pepper, seeded & minced
1/4 cup(s) Central Market 100% Spanish Organic Extra Virgin Olive Oil
1 Lb Wild Argentine Red Shrimp

Preheat grill to 350ºF.
While grill preheats, make za'atar relish by mixing tomatoes, shallots, za'atar, lemon juice, serrano peppers and olive oil in a bowl. Season to taste and refrigerate at least 30 minutes.
Place shrimp on skewers and set on a sheet pan. Season with a pinch of salt and pepper.
Grill shrimp 2 to 3 minutes per side or until they turn pinkish.
Serve with za'atar relish. Season to taste as needed.
