Grilled Shrimp Taco with Spicy Green Mango Slaw

2 large unripe or firm mangos, skin removed and flesh julienned or thinly sliced to resemble slaw
1 serrano pepper, thinly sliced or minced
1/2 cup(s) green onions, thinly sliced
1/3 cup(s) lime juice
1 Lb Argentinian red shrimp
1 Tsp kosher salt, plus more as needed to taste
1 Tsp cracked black pepper, plus more as needed
1 Tsp cumin
2 Tsp extra virgin olive oil
12 Guerrero Taqueria Style Corn Tortillas, plus more as needed

Preheat grill to medium-high.
Prepare slaw by mixing mangos, peppers, onions, and lime juice, toss to coat. Season to taste with salt. Cover and refrigerate until ready to build tacos.
In a bowl, toss shrimp with salt, pepper, cumin, and olive oil. Grill 2 to 3 minutes per side or until firm and opaque in color.
To serve, place a few shrimp on tortillas and top with mango slaw. Garnish with your favorite taco condiments. Repeat process with each taco.
