Grilled Saltimbocca Style Chicken Sandwich

1 Lb H-E-B Simply Seasoned Thin Sliced Chicken Breast
6 Tbsp Artigiana Genovese Organic Red Pesto
6 slices of sourdough bread
3 Oz sliced peppered salami
6 H-E-B Sliced Pepper Jack Cheese, slices

Instructions

Pre-heat grill to medium heat or 350-375°F. Grill seasoned chicken until internal temperature reads 165°F or until cooked to preferred doneness. Allow to rest for 15 minutes.

Preheat oven to 350°F. Spread pesto on both sides of sourdough bread and place chicken on bottom slice and top with salami and cheese. Leave top of sandwich off and bake in oven for 6-8 minutes or until cheese is melted over salami and chicken.

Place top of the sourdough on sandwich and top with your favorite sandwich fixings, veggies or condiments.
