Grilled Ribeye with Green Harissa Butter

Recipe makes 2 Servings

1/2 cup(s) cilantro, chopped
1/2 cup(s) curly parsley, chopped
3 cloves of garlic, smashed
1 medium shallot, minced
1 medium jalapeño, stem removed and chopped
1 Tsp ground cumin
1 Tsp coriander
8 Oz Kerrygold Unsalted Butter, softened at room temperature
1 Lb ribeye steak

In a food processor, add cilantro, parsley, garlic, shallots, jalapeño, cumin and coriander. Pulse until completely pureed.
Remove mixture to a bowl, add soft butter and whisk to combine completely.
Place butter in center of parchment paper then roll up and tie ends. Freeze at least 30 minutes.
Meanwhile, preheat grill to medium-high.
Season meat generously on both sides with salt and coarse ground pepper. Allow to sit at room temperature at least 20 minutes while grill heats.
Grill steak approximately 6 to 8 minutes per side or until nicely marked and cooked to desired doneness.
Remove steak from grill and add a tab of prepared butter on top. Allow butter to melt and season to taste as needed.
Chef's Note: Recover and refrigerate butter for other uses or melt and make a sauce that's great drizzled over fish or chicken.
