Grilled Pound Cake with Pineapple and Buttered Rum

Ingredients

Recipe makes 8 Servings

1 pound cake, sliced into 8 pieces
2 Tbsp unsalted butter, melted
1 pineapple, rind removed and cut into spears
1/2 cup(s) half and half
1/4 cup(s) light brown sugar
2 Tbsp unsalted butter
1/4 cup(s) spiced rum
1/4 Tsp cinnamon

Instructions

Spray a clean grill with non-stick spray and preheat to medium heat.

Brush pound cake with melted butter and grill for 2-3 minutes per side. Remove from the grill and set aside.

Grill pineapple for 2-3 minutes per side. Remove from the grill and cut into chunks.

Combine the rest of the ingredients in a small sauce pan to make sauce.

Bring sauce to a simmer and remove from heat.

Add pineapple to sauce and serve over pound cake.
