14 Oz H-E-B Steamable Bite-Sized Potatoes
2 medium red bell peppers
1 small sweet onion
8 Oz crimini mushrooms
2 Tbsp olive oil
1 Tbsp Sonoma Gourmet Roasted Chile de Arbol Extra Virgin Olive Oil
1 Tbsp Fini Balsamic Vinegar Reduction
1 Tbsp fresh garlic, finely minced

Instructions

Microwave potatoes on high 4 minutes. Allow to sit covered loosely 1 minute.

While potatoes are cooking, cut bell peppers and onion into 1-inch squares. Cut mushrooms in half.

Preheat grill to medium-high (this recipe can also be done in the broiler).

In a small bowl, whisk together both oils, balsamic reduction and garlic.

Drizzle peppers, onions, mushrooms and potatoes with half of oil mixture.

Alternately thread vegetables on skewers then place on grill.

Brown well on all sides, about 10 minutes, drizzling with remaining oil mixture during cooking.

Chef's note: Adjust amount of Chili de Arbol Olive Oil to suit your taste. Serve kabobs alongside steaks or grilled chicken.
