Grilled Onion and Nopalitos Tacos with Queso Fresco

Recipe makes 6 Servings

2 Tbsp kosher salt
1/2 cup(s) lime, juiced and divided use
1 Lb fresh nopalitos, cut in half
2 large onions, ends trimmed, skin removed and cut into rings
1 Tsp garlic powder
1 Tsp cumin
3/4 cup(s) queso fresco, crumbled
12 corn tortillas

Bring a large pot of water to a boil and add salt and half of the lime juice. Cut nopalitos into 1/2 inch strips (approximately) and place them into the water. Cook for 10 minutes. Drain and set nopalitos aside to cool.
Pre-heat grill to medium heat, 350°F to 375°F. Place grilled onions and blanched nopalitos onto grill. Cook until onions are soft and everything has grill marks.
Chop up onions and nopalitos and place in a large bowl. Add lime juice, garlic, cumin, and queso fresco. Mix thoroughly and serve on tortillas or taco shells.
