Grilled Mesquite Santa Maria Style Tri-tip

2 Tbsp extra virgin olive oil
2 Lb tri-tip roast, trimmed
1 Tbsp Mi Tienda Mesquite Seasoning
1 Tbsp Mexican oregano
1 Tsp cayenne pepper
1 lime, juiced

Instructions

Preheat grill to medium-high.

Rub olive oil over tri-tip and season meat liberally with mesquite seasoning, oregano and cayenne pepper.

Marinate meat while it comes to room temperature.

Place tri-tip on the hottest part of the grill for 3 to 4 minutes then flip and cook 3 to 4 minutes or until meat has grill marks.

Move tri-tip over indirect heat to finish cooking for 20 to 25 minutes, or until the internal temperature reads 140°F to 145°F.

Rest before carving.

Season to taste with more mesquite seasoning as needed and a squeeze of fresh lime juice.
