Grilled Meatball Kebabs with Serrano Tzatziki

6 skewers
1 cup(s) Greek yogurt
1 medium shallots, minced
1 Tbsp lemon, juiced
2 serrano peppers, roasted & seeded
3 cloves of garlic
1 Tbsp fresh mint leaves, loosely packed
16 Oz H-E-B Poblano & Cheddar Pork Meatballs

Instructions

Preheat grill to medium, about 350ºF. Soak skewers in water for at least 1/2 an hour before grilling.

Make tzatziki sauce by placing all ingredients except skewers and meatballs in a blender or food processor. Pulse until smooth.

Season with salt and pepper to taste. Chill 30 minutes.

Meanwhile, secure 2 meatballs in the middle of each skewer.

Oil grill well then cook meatballs on skewers 3 - 4 minutes per side, rotating 4 times, until internal temperature reads at least 160ºF.

Remove from grill and allow to cool slightly. Drizzle tzatziki sauce over meatballs and season to taste. Enjoy.
