Grilled Fruit with Apricot Turkey Medallions

Ingredients

Recipe makes 6 Servings

2 Lb Turkey Medallions
1/8 Tsp salt
1/8 Tsp black pepper
1 peach, (or about 1 cup, sliced)
1 nectarine, (or about 1 cup, sliced)
10 Oz pineapple rings
2 Tbsp light brown sugar
1/2 cup(s) apricot jam
1/4 cup(s) reduced-sodium chicken broth
1 Tbsp Teriyaki Sauce

Instructions

Season both sides of turkey medallions with salt and pepper. Set aside.

Slice peaches and nectarines in half and remove pit, then quarter.

Grill all fruit in a large non-stick grill skillet over medium-high heat until marked.

Transfer fruit to a bowl and sprinkle with brown sugar. Cover bowl and keep warm.

In the same skillet, cook turkey for 4 to 6 minutes on each side depending on thickness.

While turkey cooks, bring apricot jam, chicken broth and teriyaki sauce to a boil in a small sauce pot until combined and slightly reduced.

Remove from heat and brush over turkey.

Serve with grilled fruit.
