Grilled Flatbread with Chickpeas & Olive Salad

Recipe makes 6 Servings

6 Oz baby arugula
30 Oz garbanzos or chickpeas, drained and rinsed
1/2 cup(s) red onion, thinly sliced or julienned
1 cup(s) fresh mint, roughly torn
18 Oz Asaro Castelvetrano Pitted Olives, drained and rinsed
1 Tbsp fresh garlic, minced or zested
1 Tsp Central Market Organics Whole Mediterranean Oregano
1/4 cup(s) lemon juice
1/4 cup(s) extra virgin olive oil, plus more as needed to brush bread

In a bowl, combine, arugula, chickpeas, red onions, mint, olives, garlic, oregano, lemon juice and olive oil.
Toss everything to combine and season to taste with salt and pepper.
Cover and refrigerate for at least 30 minutes to 1 hour to allow flavors to meld.
Preheat grill to around 350˚F or medium-high heat.
Brush olive oil liberally onto flat bread and grill for approximately 2 to 4 minutes per side or until nicely marked on both sides.
Allow flatbread to cool slightly and serve salad on top of grilled flatbread, cut and serve.
