Grilled Chicken with Plumcot Pico de Gallo

Recipe makes 4 Servings

2 Lb chicken breasts
1 Tsp kosher salt, as needed to taste
1 Tsp cracked black pepper, as needed to taste
2 limes, zest only for chicken and juice reserved for pico de gallo
3 medium tomatillos, diced
3 plumcots, diced, seeds removed
1/3 cup(s) red onions, minced
1/4 cup(s) fresh mint, roughly chopped
1/4 cup(s) cilantro, roughly chopped

Preheat grill to medium-high heat.
Season chicken liberally with salt, pepper and lime zest, toss to combine. Cover and refrigerate for at least 30 minutes.
While chicken is marinating, assemble pico by adding, tomatillos, plumcots, red onions, mint, cilantro and lime juice. Mix well, season with salt and pepper to taste and set aside.
Grill chicken for 5 to 6 minutes per side or until nicely marked and fully cooked. Season to taste as needed, serve with pico de gallo.
