Grilled Chicken Skewers with Pineapple Mango Raita

1/2 cup(s) Greek nonfat plain yogurt
1/2 cup(s) Four J Sweet Grilled Pineapple & Mango Fish Taco Salsa
1/3 cup(s) Hot House cucumber, finely grated
1 Tsp fresh garlic, finely minced
1 Tsp gourmet pink Himalayan salt, divided use
1/3 cup(s) fresh cilantro, finely chopped, divided use
1 Lb natural boneless skinless chicken breast
1 package bamboo skewers, soaked in water for 1 hour

Mix yogurt, salsa, cucumbers, garlic, half of salt and half of cilantro in a small bowl. Whisk together.
Cut breast into long thin strips. Place strips and half yogurt mixture in a re-sealable bag to marinate. Allow to marinate in refrigerator 3 hours or overnight. Keep remaining raita chilled.
Heat grill to medium-high heat. Remove breast from yogurt and scrape off excess. Thread on skewers like a ribbon, weaving back and forth.
Grill on both sides until breast are fully cooked, about 5 to 7 minutes. Serve with black or basmati rice and drizzle with remaining raita.
