Grilled Chicken Diavola

Recipe makes 5 Servings

1 chicken, whole
2 Tsp red pepper flakes
2 lemon, zested and juiced
4 Tbsp olive oil
1/4 Tsp salt
1 Tsp black pepper

Using pair of kitchen shears, cut backbone out of chicken. Simply cut on either side of backbone.
Rinse chicken under cool water and pat dry with paper towels. Promptly discard paper towels.
Lay chicken on cutting board skin side up so that it is flat. Remove wing tips with scissors.
Sprinkle chicken with red pepper flakes, lemon zest, salt and pepper. Place chicken into large 9 x 13 baking dish.
Combine oil and lemon juice together and pour over chicken.
Allow chicken to marinate 1 hour in refrigerator.
Preheat grill to medium-high heat.
Remove chicken from fridge and allow it to sit 10 - 15 minutes while grill heats.
Place chicken skin side down 20 minutes, being sure to watch for flare ups.
Turn chicken and grill for an additional 20 minutes.
Let chicken rest 10 minutes and remove skin before serving.
