Grilled Cheesy Jalapeño Cornbread

Recipe makes 10 Servings

8 slices of bacon, chopped
3 jalapeños, seeded and chopped
2 1/2 cup(s) H-E-B Organics Cornbread Mix
1 1/4 cup(s) water
1/4 cup(s) canola oil
1 egg
8 Oz Jalapeño Jack cheese, diced

Preheat grill to medium-high. Place a 10 to 12 inch cast iron skillet directly on grill.
Add bacon and jalapeños and cook several minutes, stirring occasionally, until bacon is crispy.
Meanwhile, in a medium bowl, prepare cornbread mix according to package directions. Stir in cheese.
Pour batter evenly over bacon jalapeño mixture then move skillet to a less hot side of the grill.
Close grill lid and bake 15 to 20 minutes. If needed, adjust grill heat or move skillet to keep bottom of cornbread from burning.
Rest 10 minutes before serving.
