Grilled Cauliflower with Green Goddess

Recipe makes 4 Servings

1 cup(s) green onions, chopped
1 cup(s) italian parsley, roughly chopped
3 garlic cloves, crushed
1/4 cup(s) fresh mint, chopped
1 jalapeño, seeded
2 Oz anchovies in oil, drained
1 cup(s) Greek yogurt, plain
1/4 cup(s) fresh lemon juice
1/3 cup(s) extra virgin olive oil, plus more as needed for cauliflower
2 Tbsp water, plus more as needed for desired consistency

Preheat grill to medium-high; approximately 375 to 400˚F.
In a blender, combine onions, parsley, garlic, mint, jalapeño, anchovies, yogurt, lemon juice, olive oil and water. Blend until smooth and season to taste. Refrigerate for later use.
Trim end of cauliflower, cut into large pieces and toss into a bowl with olive oil and a pinch of salt and pepper.
Place on grill and cook for 5 to 7 minutes per side depending on thickness or until nicely marked.
Remove from grill and allow to rest for 5 minutes. Serve with green goddess dressing as needed. Refrigerate remaining dressing and use on anything from veggies to meats.
