Grilled Cauliflower Steak Burger

Recipe makes 4 Servings

1 large head of cauliflower, cut into 1/2 inch steaks from top to stem.
2 Tbsp extra virgin olive oil
4 bakery sourdough buns, plus more as needed
1 cup(s) guacamole, as needed
2 McClure's Sweet and Spicy Pickles, as needed for garnish

Fill a large pot with water and set over high heat. Bring to a boil, place cauliflower in pot and cook 3 to 4 minutes. Remove cauliflower and set aside.
Preheat grill to medium-high. Season cauliflower liberally with salt and pepper then drizzle with olive oil.
Grill 3 to 4 minutes per side or until nicely marked on both sides. Remove from grill.
To assemble burgers, toast sourdough buns then add cauliflower steak and top with guacamole and pickles.
