Grilled Brats with Lager Braised Peppers and Onions

Recipe makes 4 Servings

4 cup(s) lager style beer, (or your favorite beer) 3 cups for soaking brats and 1 cup reserved for onions and peppers
4 Brats style sausage
2 Tbsp canola oil
2 cup(s) green bell pepper, thinly sliced or julienned
2 cup(s) yellow onion, thinly sliced or julienned

Preheat grill to medium high heat of between 375˚F to 400˚F.
While grill heats place any metal or grill safe pan on grill and add 3 cups of beer.
Grill brats until nicely marked and fully cooked.
Place brats into pan with beer to soak up flavor and continue cooking while making peppers and onions.
In a large non-stick sauté pan set over medium heat add oil, pepper and onions.
Stir fry until peppers and onions begin to caramelize and soften.
Add beer and continue to cook until beer completely evaporates and liquid is slightly thick. Season to taste.
Serve brats on your favorite bun and top with pepper and onion mixture.
Garnish with any of your favorite other condiments.
